Pastry Course at Richard Bertinet

Myself and Nigel went to Bath in the UK last week to do a pastry course with the great Richard Bertinet.  Nigel had previously completed the five day bread course and was evangelical about Richard's techniques.

Although I would call myself reasonably competent, I picked up so many tips and have spent all my time in the kitchen practicing all we learnt.  To the detriment of my waistline I have to say.
